I just recently started baking and cooking a lot more and I love it!!  My boyfriend and I both love sweets; cookies and cakes are our nemesis :).  So we both vowed to only comsume the sweets that I make at home.  Lets just say that Ive been searching the net for healthy recipes like crazy.  I thought I would share my Chocolate Chip Cookie recipe and then have a place where people could share their own healthy recipes; dessert, meal, or snack. 

 

Chocolate Chip Cookies

(adapted from "The Best Damn Cookie in the Universe" http://www.foodieandtheeveryman.com/2010/01/26/the-best-damn-cookie...)

 

Oven Temp: 325 Baking Time: 20-25 mins. (or until cookies are brown on the edges)

 

Ingredients:

1.5 cups of whole wheat flour (I like Gold Medal)

1/2 cup whole wheat pastry flour (I get mine from the bulk section of my grocery)

1/2 tsp baking soda

1/2 tsp salt

3 tbs butter, melted

2/3 cup of unsweetened apple sauce

3/4 cup brown sugar unpacked (or sugar substitute)

2 tbs pure vanilla extract

1 egg

1 egg white

1 tsp cinnamon, nutmeg, cloves, or any kind of warming spice you prefer (or all three)

1 cup of Ghirardelli 60% Cacao chips or chunks

 

Mix melted butter, apple sauce, and sugar.  Add in vanilla and egg; mix until creamy.  In a seperate bowl mix the flour, baking soda, and salt.  Slowly incorporate the dry mixture into the wet. Dump in the chips and fold them in.  Make sure that you mix the chips in good so that you dont have a bottom full of chocolate chips in the end.  Drop tablespoons full onto a greased cookie sheet.  Bake and enjoy :).  I usually turn my cookie sheets every 5 minutes to insure an even bake.  My oven cooks more quickly in the back than the front so you may not need to do this step.  Makes about 25 cookies (dependent upon size).

 

I tried to change this recipe to be a bit healthier.  Im no chef or anything but Ive made CCCs using this recipe about 5 times, changing it a little every time.  This alteration was the best one I think.  The cookie comes out chewy, soft and not too sweet.  I prefer for my baked goods not to be overly sweet.  So if you like it really sweet, Id add either a)more chips, b)more sugar, or c)use sweetened apple sauce.  Using Ghirardelli chips (especially the 60%) really makes the cookie decadent, considering I more than halfed the sugar and butter in the original recipe.  So dont scimp out and buy cheaper chocolate or it just isnt the same.  Good luck and happy baking.  peace.

Blueberry Muffins

Oven Temp:400 Baking Time:20 mins

Ingredients:
1 cup whole wheat flour
1 cup whole wheat pastry flour
3/4 cup milk
1/2 cup unsweetened applesauce
1 egg
1/4 cup brown sugar
3 tsp baking powder
1/2 tsp salt
1 tbs pure vanilla extract
dash of cinnamon
1 1/2 cups blueberries

Mix wet ingredients in a small bowl (milk, applesauce, egg, vanilla). Then mix all dry ingredients (flour, sugar, baking powder, salt) in a large bowl and make a hole in the center. Dump in liquid and stir until just combined. The mixture will still be a bit lumpy. Fold in the berries and then divide mixture into greased muffin cups. This recipe can also be used to make mini muffins, just reduce the time to around 10 minutes.

I really liked these muffins as a snack and for breakfast. I intentionally lowered the sugar content from the original recipe just so I could eat them for breakfast. It was nice to have something I felt like wouldnt sky rocket my blood sugar at 6 am. Ill post my others soon.

Anyone make their own granola?

I do my own mix with store bought, but would love to make my own :-)

Here's my new favorite snack courtesy of Jenni Raindance*.

Iron Balls

- 1/4 cup cocoa powder

- 1/4 cup oats

- 1/4 cup chopped walnuts (or dried shredded coconut)

- 1 cup pitted and chopped dates

 

- blend first three ingredients in a blender or magic bullet then add dates and blend some more.

- roll into 1" sized balls, place on plate a freeze for a couple of hours

- after balls are set you can put them in a container and keep them in the freezer, fridge or out on the table for everyone to enjoy!

- hints

- if the mixture seems too dry and the balls will not form, add a small amount of OJ to moisten things up or you can boil down the dates a bit before blending but don't make them too runny

-I'd at least double the batch because these suckers go fast

- these are also diabetic friendly =)
