Quinoa cooked with coconut oil, toss in carrots, broccoli, etc (I always cook mine in the rice cooker)
Sauteed bell peppers, onions
Ginger
or sage, dill, etc with olive oil instead of coconut
It tastes fine at room temp, since I usually don't have access to a convenient microwave. You can also throw it in a wrap.
