Tasty! Sounds like this would go nicely with a slice of beer bread.

I'm currently loving a salad (it's obviously a little warmer in the southern hemisphere at the moment!) that goes a little bit like this:

Roast some pumpkin
Meanwhile, chop some spring onions (scallions), some almonds, some preserved lemon and put them in a bowl with some olive oil, lemon juice and sumac.
When the pumpkin is ready, you can mix it all in together and have a warm salad, or wait until it's cooler and have a room temperature one. Either seems to be yummy.
I have also subsituted the pumpkin for French Puy Lentils and it still seems to work.

Sorry for the total absence of quantities, but the dressing you can just do it for your own taste, and the amount of peple eating can guide how much pumpkin you use.
Hey, so i just came straight from "hooping chat" where i read the discussion "Hooping; recent discoveries", SO funny, go check it out. Well anyways it made me think that since i am cooking right now maybe i should post/share what i am cooking. This is one of my absolute favourite recipes...

Wheatberry Salad:

-Boil 1 cup of Wheatberries (perhaps otherwise known as wheat kernels or wheat grains)
-Boil 1 cup of Cous Cous
-Boil 1cup of Tabouli
-1/2 cup Lentils
-Chopped Dill
-Diced Garlic
-Chopped Onions
-Chopped Cucumber
-Chopped Tomato
-Chopped Yellow Pepper
-Dried Cranberries
-Pumpkin Seeds
-Lemon Juice
-Sesame Oil
-Sea Salt

Wait till everything cools, then add Wheatberries, Cous Cous, Lentils & Tabouli together in a bowl, throw in all the veggies and seeds and cranberries. Add Lemon Juice, sesame oil and sea salt to taste, ad a little at a time until you find the taste is to your liking. Now mix all together. Refrigerate until cold and serve! This is so yummy, and the Wheatberries burst with a wonderful flavour in your mouth.

Don't take this recipe super seriously when you are making it, it's really easy, and you can change it up if you prefer a different veggie or seed. Make adjustments where needed. This is personally just how i make it and love to eat it.

Hey guys! I just made the best salad and had to share :)

spinach leaves
diced cucumber
blueberries
golden raisins
walnuts
crumbled goat cheese with herbs
Litehouse raspberry walnut vinaigrette

So good!

Yummy new wrap: Tortilla, cucumber dill hummus, sliced cucumber, sliced red pepper, spinach lettuce mix, light drizzle of olive oil over the greens, along with a little salt, garlic power, and lemon juice. YUM!

1 Purple onion chopped ( I use 1/2)
2 chopped tomato's
Can of corn (drained)
Can of black beans (drained)
Chopped cilantro
Feta cheese
a couple of squirts of light Italian Dressing

Chill... it is good with chips, or alone! Meat eaters will like it on bake chicken apparently ;)
I have made it a zillion times this summer.
I just tried something tonight and I loved it so much that I just have to share. My friend Chuck's dad had a heart attack and so now he is having to cut back on all his cholesterol and fat and watch the carbs too I think. So Chuck mentioned to me that they have been using cauliflower in place of pasta.
WHAT ??????? !!!!!!!
I have never heard of this so of course I go get a head of cauliflower and try it out. Chuck bakes his in the oven.
I was in a hurry to get my daughter, Sharley to the airport so I steamed mine.

( I have no name for this, so we will just call it the " Pasta Dish With No Pasta".

So: One head of cauliflower cut into big pieces and steamed until tender and coming apart easily with your fork.
Put the steamed pieces into a big bowl and mash coarsely with a fork. ( You could use a potato masher ).
Add salt, pepper, and drizzle with olive oil.
I added a little garlic powder and Italian seasoning.
At this point, the cauliflower itself was delicious and could have simply become an excellent side dish.
Sharley had already made an excellent Spaghetti sauce from scratch full of Summer vegetables.

We loaded the cauliflower mixture on our plates as you would spaghetti noodles, and then topped it with the spaghetti sauce, and ... It was DELIGHTFUL! We could not believe how great it was, and so healthy! ^__^
I suppose you could eat piles and piles of it and never gain weight from it, depending on how low-fat you have made your sauce.
The more upscale version of this would be to use baked cauliflower and roasted garlic, sea salt, fresh ground pepper.

Chuck says that you can put the cauliflower in the mixing-bowl and treat it like mashed potatoes too. I have not tried this yet, but I probably will soon, and, just like I cook my mashed potatoes, I will also put in a small turnip for added flavor.
my future step mom in law puts cauliflower in her mashed potatoes to give the kids that extra dosage of veggies. they dont know and apparently i wouldnt have if she didnt tell me. i am NOT a cauliflower fan, but i can tell you i couldnt taste a difference. i think it did make it a bit creamier without adding a bunch of butter probably, but ive never had her regular mashed potatoes. so if you have young kidlets (or grand kidlets) this is the way to sneak in extra goodies!!
