I am making black bean tacos with guacamole, tomatoes, black olives, green onions, salsa, cheese, and sour cream. *licks her lips*

I just had spinach, radish and brown rice. Now some banana frozen yogurt that I got from my friend who made it, fresh out of her beloved cows :)
I think I am going to have a giant salad tonight. Time to clean the fridge out of the misc. left over veggies. :)
That's a good idea Skittles!

My hubby recently discovered the white thick type of radish (I forgot the name) which is pretty cheap, even organic around $2/pound. So tonight, brown rice mixed with amaranth, and cabbage/radish/Indian spices thing. Last weekend I cooked lambsquarters, it's technically a weed but totally amazing when you cook it! It has more nutrition than spinach and I would say the taste is better too. It feels super good to the body. So if you see any lambsquarters growing on your backyard or by the road, I encourage anyone and everyone to throw it in the pot and try it! (Ok, maybe it's not a great idea to eat anything that grows by the road but you get the point)
I am making yellow curry spiced coucous with carrots, bell peppers, onions, and garbonzo beans or dinner this evening.
Tonight I am making dinner for a few friends. Homemade fettucini alfredo, garlic bread, and a side salad with homemade balsamic vinegarette. Not the healthiest, but it is a rare treat.
Tonight I'm making cream of broccoli soup and pouring it over quinoa. Mixing them turns a good meal into an amazing one!
I have no plans for dinner yet, but I'm about to go out to the garden and pick a huge salad - lettuce, spinach, peas, radishes, nasturtium greens & flowers, and we'll of course add some of the sprouts we grow in jars on our windowsill. I'll probably make something involving fava beans because we have a lot of those in the garden, too. Perhaps I'll make steamed fava beans, peas, and broccoli from the garden over quinoa. With curry. Lots of curry. :)
mmm, all these delicious posts are wishing i had more than crackers at my desk right now!
