Zucchini Marinara (Serves 4-6)

In large saucepan, combine:
1 1/2 cups water
1 cup carrots, chopped
1 cup celery, chopped
1 cup onion, chopped

Bring to boil, simmer 15 minutes. Then add:

1 15 oz can tomato sauce
2 cups chopped Zucchini (or other squash)
1 package (13 oz) spaghetti sauce seasoning mix
1 15 oz can Italian Stewed Tomatoes (with juice)

Bring to boil, reduce heat and simmer covered for 15 minutes or until Zucchini is tender. Serve with pasta and garlic bread.

Hiya! This is probably kind of bizarre but I saw your commentary in the veggie thread, would you be interested in a recipe for a zucchini marinara? I mean if you're looking for meatless recipes it's a pretty good standby, so I thought I'd offer it up.
